What's in Season from September to November

Autumn's cast is small and reliable. Dahlias are the star: hundreds of varieties from tight pompons to dinner-plate blooms, in every shade from cream to near-black burgundy, running from late summer to the first frost. Chrysanthemums are the workhorse, available in disbud, spray, spider and football forms, and the longest-lasting cut flower in the shop. Sunflowers carry September and much of October. Around those four sit the flowers that give autumn arrangements their texture. Celosia in its velvet cockscomb and feathered plume forms, amaranthus trailing over the edge of a box, solidago for acid-yellow lift, marigolds in orange and gold, gerbera daisies, alstroemeria, lisianthus and late garden roses, which reach their second peak of the year in September and October when the nights cool.

Then the non-flowers, which matter more in autumn than in any other season: hypericum berries, seeded eucalyptus, oak and maple foliage, bittersweet, wheat, pepperberry and bare branches. An autumn arrangement is often two-thirds flower and one-third structure, and that structure is what makes it read as fall rather than as a bright bouquet in warm colors.

September: the Last of Summer, the First of Fall

September is the most generous month of the flower year and the hardest to categorise. Summer's roses, lisianthus and hydrangea are still coming in, dahlias are at their absolute peak, sunflowers are everywhere, and the first asters and early chrysanthemums appear alongside them. You can build a bouquet in September that looks like July or one that looks like November, from the same buckets.

The month's natural palette is bright rather than deep: sunflower yellow, marigold orange, hot pink dahlia, acid-green solidago. September is also a busy month for reasons that have nothing to do with the weather: the school year restarts, Grandparents Day falls on the second Sunday, the Jewish High Holidays land in September or early October, and September birthdays are the most common in the United States. October: the Deep Month

October is when the palette finally commits. Dahlias darken into burgundy and plum, chrysanthemums arrive in bronze, rust and copper, celosia turns the colour of red wine, and the berries start. It is the month in which an arrangement can be genuinely dramatic without anyone calling it Halloween.

Two directions work. The first is saturated warmth: red and orange roses, magenta dahlias, amaranthus and solidago, which is exactly what Oliveira is — a bouquet with the energy of a market stall. Both are October; they simply choose different halves of the same palette.

October is also the month when texture starts doing real work. A handful of hypericum berries or a few branches of seeded eucalyptus will change a summer-shaped bouquet into an autumn one faster than any change of flower. The Fall Palette and How to Use It

Autumn colors are the easiest palette to love and the easiest to overdo. The classic version runs burgundy, rust, terracotta, amber, mustard and cream, with plum as the cool note that keeps the whole thing from going flat. Everything in that list agrees with everything else, which is why fall arrangements look expensive with very little effort.

Three combinations we come back to constantly. Rust and cream: terracotta dahlias and roses against ivory chrysanthemums and pale greenery — soft, modern, and the safest choice for a gift when you do not know the recipient's taste. Burgundy and gold: deep red roses, bronze mums, solidago and eucalyptus — dramatic, and the right answer for a dinner table. Yellow and white: sunflowers, yellow roses and chamomile, as in Tamara — cheerful autumn rather than solemn autumn, and the version most people actually want in a bright California kitchen.

What to avoid: too much brown, which reads as dried rather than fresh; orange used alone, which slides into Halloween; and more than three main colors, which turns a fall bouquet into a rainbow. Fall Occasions Worth Sending Flowers For

Back to school and teacher gifts open the season in September — a small bright bouquet, nothing formal. Grandparents Day is the second Sunday of September. Flowers do more work in October than in June precisely because nobody expects them: a gift that arrives without an occasion lands harder when the days are getting shorter.

What Fall Looks Like in California and Hawaii

It is eighty-two degrees in Los Angeles in October and the leaves are not turning. That does not mean there is no autumn — it means the season arrives at the flower market rather than in the street. California is one of the great flower-growing states, and the growers around Oxnard, Half Moon Bay and the Central Coast follow the same calendar as everyone else: dahlias into late October, chrysanthemums from September, berries and eucalyptus through November. What changes is the styling. In a warm climate a heavy brown-and-rust arrangement looks out of place indoors; lighter greens, cream, plum and a single deep accent read as autumn without weighing down a bright room. Making Autumn Flowers Last

Fall flowers reward basic care more than any other season's, because they are built to last. Cut every stem on an angle before it goes into the vase, strip anything that would sit below the waterline, and change the water every two days — cloudy water is what kills a bouquet, not age.

Keep the vase away from direct sun, heating vents and, above all, the fruit bowl: ripening fruit releases ethylene gas, which makes petals drop early. Chrysanthemums are nearly indestructible and will outlast everything else in a mixed arrangement, so when the roses go, pull them and let the mums carry on for another week. Dahlias are the opposite — they drink heavily and dislike being moved, so top up the water daily and leave them where they are.

Woody stems, branches and berried foliage benefit from a hard diagonal cut and, for the thickest stems, a short vertical split so they can take up water. My Thoughts — a Florist's Perspective on Fall Flowers

Autumn is the season when the flowers do the designing. In spring you have to work at it: tulips and ranunculus are beautiful and slightly characterless, and the arrangement is whatever you build around them. In October you put a burgundy dahlia next to a bronze chrysanthemum and a sprig of hypericum, and the thing is finished. There is a reason florists get sentimental about this time of year.

My honest advice for anyone ordering in autumn is to trust texture over size. The instinct is to ask for more flowers; what actually makes an arrangement look like fall is a few branches, some berries and one dark bloom that anchors everything else. A modest bouquet with real structure looks considered. A large one in all the right colors but no texture just looks like a lot of flowers.

The other thing I would say is to take advantage of how long these last. A summer bouquet is a five-day pleasure. An autumn one, kept out of the sun with the water changed, is genuinely still good after two weeks — and by the time the mums finally give up you are usually thinking about the holidays anyway. There is no other season that gives you that.
